The Siberian sturgeon Acipenser Baerii originates from Russia, but is currently cultivated in France, Germany, China, etc. This species lives for more than 20 years, can weigh over 15 kg and matures in the seventh to eighth year.
Its eggs are usually over 3 millimeters in size and are a medium to dark brown color. The taste is best described as nutty, creamy taste with a fresh aftertaste.
